Peanut Butter and Jelly Blondies

It's been a while since I've made a recipe from Peanut Butter Comfort, so I decided to make one while I was waiting for my mom to get here so we can go shopping, have lunch, and get mani's and pedi's!



First, line your 8"x8" pan with aluminum foil and spray it with cooking spray. I'm lucky in the sense by pan comes with a wicker basket!

 Then, melt your butter in a medium sized microwave-safe bowl. Add peanut butter and heat for 45 seconds and stir until smooth and combined.




Then add brown sugar and stir to combine. Add egg and vanilla, stir to combine. 




 Finally, add flour and salt and stir until just combined, DO NOT OVER-MIX! Pour batter into pan, smooth with spatula.


Add 4-5 tablespoon-sized dollops of peanut butter and jelly. Then use a knife and marble them by zigzagging across the pan. Do not overdo it or the surface will look muddy not marbled (my pic is WAY over zigzagged, do not do that, lol).


Bake 24-28 minutes, cool for 30 minutes, serve, and enjoy!

Peanut Butter and Jelly Blondies

makes 1- 8"x8" pan, 9 generous squares

1/2    c     butter (1 stick)
1/4    c     creamy peanut butter
1        c     brown sugar, packed
1               egg
2        t     vanilla
1 1/4  c     flour
1/4     t    salt
1/3     c    creamy peanut butter (for swirling)
1/3     c    jelly (for swirling [I used raspberry])

  1. Preheat oven to 350 deg. F. Line an 8"x8" pan with aluminum foil and spray with cooking spray.
  2. Melt butter in a medium sized microwave safe bowl (60 seconds). Add 1/4 c peanut butter, microwave 45 seconds, stir to combine.
  3. Add one at a time and stir to combine each: brown sugar, egg, and vanilla. Add flour and salt and stir just until combined. DO NOT OVER-MIX! 
  4. Pour batter into pan, smooth with spatula.
  5. Add 4-5 dollops each of the extra creamy peanut butter and jelly. Using a table knife, marble them in zigzagging patterns, being careful not to over do it or it will look like mud.
  6. Bake 24-28 minutes until the edges begin to slightly pull away from the sides of the pan and the center is golden.

    For gluten free blondies: use your favorite gluten-free flour blend!
