Sweet and Sour Chicken (or Pork) with Rice

Ok, so here we go! One of my fave recipes. The best part? It came from the label of a bottle of sweet and sour sauce! Cheers :). Time to don your favorite apron, put your locks in a pony-tail and get to work!  ...thorough recipe at the bottom...

Start by cutting your 1# of chicken or pork into 1 inch cubes.
Then mix 1 T soy sauce with 1 T corn starch and toss that with the chicken
Then, heat up 2 T Extra Virgin Olive Oil in a large electric skillet or fry pan. Add chicken and brown slowly (on medium) until cooked through. At the same time, start your rice by adding 1 c rice to 2 cups water, cover, turn on high.

When water in rice is boiling, turn to low and simmer until water is boiled off. When chicken is browned, add 1/4 c water, turn to med-lo and simmer for 20 minutes, stirring twice.


In the meantime, chop 1 green pepper and 1/2 yellow onion into large-ish chunks. Same with your pineapple. Or, you can use that delicious left-over pineapple from the pizza you made the other day!
Your rice will be done when there is no water in the pot and it tastes done (try it!). It will also be slightly sticky.
Dump your onion, green pepper, and 1 c sweet and sour sauce into your pan of chicken, stir to coat with sauce. Cover and simmer for 10 minutes, stirring frequently. You can also add 2 thinly sliced carrots, but I usually do not.
Pour yourself a glass of Blue Moon; don't forget the slice of orange!
...wait! How did that get in here ;)
Add the 1 c pineapple and cook through.

 When finished, serve with rice. If you need a little crunchy, add some chow mein noodles!

Sweet and Sour Chicken (or Pork)

1     #        boneless pork or boneless-skinless chicken
1     T        cornstarch
1     T        soy sauce
2     T        EVOO
1/4  c        water
2               carrots
1/2           onion
1              green bell pepper
1     c       sweet and sour sauce
1     c       pineapple chunks

Cut pork into 1 inch cubes. 

Mix cornstarch and soy sauce together; toss with pork. 

Brown pork, slowly, in hot oil in skillet. 

Add water, simmer, covered, for 20 minutes, stirring twice. 

Cut carrots into thin slices and onion and pepper into 1 inch squares; stir into skillet with sweet and sour sauce. Simmer, covered, for 10 minutes, stirring frequently. 

Add pineapple, heat through. 

Serves 4. 

Rice

1     c        uncooked rice
2     c        water

Add rice to water in pot. Place on high heat.

When water is boiling, put on cover and turn heat to Low. 

Rice is done with water has dissipated and rice is finished (by tasting) and slightly sticky. 

Leave cover on rice and remove from heat until rest of dinner is done.

Serves 4.
