BBQ Chicken Salad

This fabulous recipe is from Amy on her show on Fox 11 out of Green Bay. It's super tasty. I do, however, make mine without avocado or beans because I do NOT like avocado or beans. I also add baked tortilla strips to it for an added crunch!


2-3                         skinless, boneless chicken breasts
1               large     head romaine lettuce, chopped
6-8           c            spring mix lettuce
1              c            tomatoes, seeded and diced
1                            avocado diced
1              c            corn
1       15 ounce       can black beans, drained and rinsed
1             c             shredded cheddar cheese
1/2          c             shredded monterey jack cheese
1/4          c             chopped, fresh cilantro
2             c             prepared ranch dressing
1             c             bbq sauce, divided


Grill chicken, brushing with 3/4 cup of bbq sauce.  Mix remaining 1/4 cup bbq sauce with ranch.  Chill dressing until ready to serve.  Cut grilled chicken into thin strips or chunks.  Place lettuce on a large platter or individual plates.  Top lettuce with tomatoes, avocadoes, corn and beans.  Next place chicken on top, then cheeses and cilantro.  Serve right away with dressing on the side.
