Mozzarella stuffed chorizo balls and spaghetti
Ingredients:
1 # chorizo (I used ground chorizo)
1/2-1 c shredded mozzarella
2 T Extra Virgin Olive Oil
spaghetti noodles
jar of pasta sauce
shredded Parmesan
fresh basil (for garnish)
Take chorizo and split in to equal size balls (I made 8). Form a divot/crater in each one. Stuff with some mozzarella cheese. Close opening.
Put EVOO in fry pan, heat to medium. Place chorizo balls in hot pan. Cook, turning, until internal temperature is 160 degrees F.
Meanwhile, cook desired amount of spaghetti according to package directions, toss with desired amount of desired pasta sauce.
Serve chorizo balls over spaghetti with shredded Parmesan and fresh basil. Enjoy!
