Ok, so this recipe is one my mom ALWAYS made for us growing up. It's from Betty Crocker, but I'm condensing the 3 separate recipes into 1 area for all of us to use (well, mainly me, lol).
Old-Fashioned Mac and Cheese
6-7 oz elbow macaroni (about 2 cups)
2 T grated onion
1 t salt
1/4 t pepper
3 c Velveeta (about 3/4#)
1 T Butter
White Sauce
4 T butter
4 T flour
1/2 t salt
1/4 t pepper
2 c milk
Heat oven to 375 deg. F. Cook macaroni as directed on package. Place 1/2 the mac in un-greased 2qt casserole. Sprinkle with 1/2 the onion, salt, pepper, and cheese; repeat.
For the white sauce, melt butter in saucepan over low heat. Blend in flour, salt, and pepper. Cook over low heat, stirring until mix is smooth and bubbly. Remove from heat, stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute.
Pour white sauce over casserole. Dot with butter.
Bake: 30 minutes, covered
15 minutes, uncovered
